What to eat in Trieste
Meat dishes
La Jota
Probably the most typical dish of Trieste cuisine, it's a soup of sauerkraut, potatoes, and beans flavored with pork, with a slightly acidic taste. You either love it or hate it.
"Bobici" soup
A soup of corn and beans and smoked ham
Gnocchi triestini
These are the famous Trieste-style bread gnocchi, made with stale bread, milk, parsley, speck, or ham. Among the most famous local variations are gnocchi con le susine, made with plums, eggs, potatoes, and cinnamon.
Gulasch Triestino
it's a meat stew in sauce, with paprika.
Cotto in crosta
It is a leg of ham covered in bread and then roasted, it is served cut into thick slices accompanied by mustard and kren (spicy horseradish root)
Caldaia
it is a broth in which various cuts of meat and sausages are boiled, among which the most common are, without a doubt, the Vienna and Cragno, of which the best known is the "Porzina", or boiled pork shoulder.

Spiced potatoes sautéed with onion and bacon. They can be served crispy or creamy.

Fish dishes
Brodetto alla triestina
It is generally prepared with fish from the Upper Adriatic, small fish (the minudaia) to which molluscs and crustaceans are added
Sardoni in Savòr
This ancient dish is recommended especially for those who love strong and decisive flavours and is traditionally made with "barcolani" sardines, that is, less than a year old, which are fried and served with sautéed onion, garnished with bay leaves and black pepper
Scampi e Canoce alla Busara
Scampi and mantis shrimp sautéed with tomatoes, spices, and wine.
Sweets
Strucolo
Trieste's version of the Austrian strudel. It's served with various fillings, the most famous being apple (Strucolo de pomi), cherry, and fig.
Presnitz
We're talking about rolled puff pastry filled with chopped dried fruit, sometimes flavored with cocoa and/or rum.
Putizza e Gubana
Leavened baked sweets, with more or less abundant fillings of dried fruit and spices.
Pinza Triestina
A sweet bread reminiscent of Easter dove cake, but with aromas of anise, orange peel, and rum.
Gibanica
It has a shortcrust pastry base and a filling of three different layers: walnuts and apples, ricotta and poppy seeds.
Favette Triestine
Almond paste and sugar balls flavored with cocoa, vanilla, and maraschino.
